Olives

The sacred fruit of the olive tree finds place in Mediterranean cuisine and diet.

The table (edible) olives are bigger than the olives for production of olive oil.

Collect as unripe green olives and mature black olives.

The most famous edible olives in the world are from Kalamata.

Our olives of organic agriculture are from in Messinia where a group of farmers carefully collected, package and make several recipes in the traditional manner.

The Throuba olives of organic agriculture are from Northern Aegean island of Thassos cured in raw salt without thermal treatment.

The variety "Chondroelia" from Chalkidiki is world famous for its full thick, juicy fruit.

The variety "DAMASKINOELIA" - "ORCHAS OLIVE" is revival of a very old (ancient?) Greek olive.

There is a view that is a descendant of the ancient Greek variety Orchas or Orchemon. The variety is listed by G.Tavanti (1891) (as Archemora).

This identification is probable mainly because of the similarity of the fruit of "Damaskinoelia" which is similar to the testicle in shape and size, as there is not another olive fruit to present it convincingly.

The tree is found sporadically among other trees with cultivated varieties, almost all over Greece. The systematic cultivation began in Argolis-Arcadia area (Astros).

This is the tree that produces the largest olive fruit size, often exceeding 20 gr and is known mainly by the name Gaidourelia. The total production is estimated at 1500-1800 tonnes yearly.

It is believed that the same tree grown in the region Puglia (Apulia), Italy named Bella di Spagna or Cerignola and it does not exist in Spain (G.Kostelenos). Comes from the Latin name of the botanical classification Olea europea var. major macrocarpa.

Also we can produce excellent olive oil, something perhaps unique among ordinary table olive varietie.

Olives of Kalamata of conventional cultivation

• The black Kalamata olives in a traditional manner are marinated in brine with aromatic herbs,orange peel, vinegar and extra virgin olive oil "zoë".

• The black Kalamata olives without seed in a traditional manner are marinated in extra virgin olive oil "zoë", aromatic herbs and vinegar.

• Place of origin
Τhe best quality of conventional olives are from the Greek area of Peloponnesus, specifically the region of Kalamata.

Thassos is a small island with a unique variety of Olive tree. This olive tree produces a fruit that when ripen is wrinkled and sweet in taste, good for both producing olive oil and table (edible) olives.
